Too many tomatoes? Try making fried green tomatoes

As the end of summer approaches, gardens and countertops are overflowing with homegrown fruits and veggies.

Yardbird Smoked Meats chef and owner Jeremy Grandon joined us on The Nine to show us how you, at home, can take your unripe, green tomatoes and turn them into something tasty. A proven seasonal favorite at Yardbird Smoked Meats is their Fried Green Tomatoes.

Fried Green Tomatoes

  • 4 green tomatoes
  • About 1 egg for every two tomatoes
  • ½ cup buttermilk
  • 1 quarts panko bread crumbs
  • 1 cup quart cornmeal
  • 1 tablespoon Florida bay seasoning
  • Flour as needed, about 1-1/2 cups

Steps:

  1. Skim off ends of tomatoes, reserve for salsa topping
  2. Slice tomatoes horizontally into 5-6 ¼-5/16 inch slices
  3. Add buttermilk to eggs and whisk
  4. Combine breadcrumbs, cornmeal and Florida bay- mix well
  5. Dredge tomato slices thoroughly in flour and allow to stand for ten minutes
  6. Dip floured tomatoes in egg wash then dredge in bread crumbs to thoroughly coat
  7. Pan fry in canola oil at 325 degrees until golden brown, about 1.5 minutes per side. Remember to not crowd the pan with the tomatoes, as they won’t brown and crisp as they should

Tomato Salsa

  •  Half a large red onion, peeled and coarsely chopped
  • 3-4 garlic cloves
  • 1 jalapeno and 1 poblano peppers, seeded and coarsely chopped
  • Green tomato scrap ends from fried green tomatoes
  • 1.5 quarts cored and coarsely chopped tomatoes
  • 1 tablespoon ground cumin
  • 1.5 tablespoons salt
  • Juice of 1 lime
  • 1 tablespoon hot sauce

Steps

  1. Grind red onion, garlic and peppers together in food processor to fine chop, place in large bowl
  2. Add green tomato and chopped tomato to food processor in batches (do not overfill)
  3. Grind tomato to coarse chop
  4. Combine tomato with onion, peppers and garlic
  5. Add remaining ingredients and mix well
